Part of me thinks it would have been so lovely to have the last deleted scene in place in the film, with the two of them dreaming about each other, but in fact I think it would have made the film much more predictable, because we would know they had fallen for each other.
As it stands, one is never quite sure exactly how much they like each other (rather like being in an early relationship oneself), which keep us on our toes guessing all the time. Thanks for this Anne -I was going to post something myself when I got time!

that's an interesting point. also, the whole confrontation with elsa would have been hard to swallow, i mean... acting all "can't take my eyes off me? i don't know what you're talking about!" uh, yeah you do... we all saw you dreaming about it.

Because this story I'm working on is all post-rowboat pre-Laendler (well, there's a little post-Laendler), I have had to think quite a bit about the trajectory each of them follows over this period, thus many of the posts I've been making. (Although the story is all Maria POV). I always thought that, over this period, she starts to admire him, and be intrigued by him, and maybe even have some dreams about him where her subconscious takes over, but that she can't (or won't allow herself to) ever acknowledge that these are romantic or even physical feelings. As Lemacd pointed out recently, that agonized "I don't know! I don't know!" may be the first time she really has to confront it.
As for him, because I do kind of have to calibrate his feelings and behavior, hmmm, I think maybe he admires and is intrigued by her too, and a little bit attracted to her. That's the difference -- he KNOWS there is some attraction there, but he's too much of a gentleman, or something, to act on it.

The second one is the set-up for the scene when Maria returns from the abbey. There is another angle of it around here, with her in the pretty green dress, Chris in an open shirt and they are talking to Bob Wise. I imagine he wasn't costumed, just feeding her the lines as they filmed her.

Not sure if you can do it on an iPhone, but if you have an Android, you can save and download these gifs onto your phone and watch them 24/7 wherever you are! (you'd have to go on Tumblr first via the link) When I discovered that feature, I went on a download splurge.

Hope I can explain this clearly: she has her hands clasped together (but not touching each other). The Captain has his hands around hers. You can see both of her thumbs sticking out and wiggling.

I'm actually a bit curious about his hands. More specifically, what's on his fingers. On one hand he has what must be a wedding ring. (Julie almost looks like she's tapping it - at least in the GIF), but there's another ring on his other finger. I know I've seen it in other scenes and I cannot figure out what it would be. Thoughts?

That is a signet ring----it often would be initials or a family crest, used with wax for sealing letters. I believe it is Chris' own ring----he has worn it in many movies. I do not know what the insignia is, and haven't ever found a photograph that is clear enough to make a guess.
